The Portuguese was in his second spell at the club, taking charge in June 2013, before leading the club to the Premier League title.
However their terrible start to the defence of their league, losing nine of their 16 league games so far, left the board with no option than to fire the Portuguese.
His departure leaves Ghana defender Baba Rahman with an uncertain future at the club as Mourinho signed the left-back from German side Augsburg in the summer.
The youngster has struggled to hold down a starting position at the club despite the opportunities given him by Mourinho and with a new coach set to arrive at Stamford Bridge, Baba faces an unknown fate in his future with Chelsea.
Mourinho's last match for Chelsea was on Monday when they were defeated 2-1 by surprise leaders Leicester City.
Pep Guardiola, Guus Hiddink, Brendan Rodgers Avram Grant and Juande Ramos have all been named as possible coaches to take over the post.
